Description
This low carb pizza casserole is loaded with gooey mozzarella, savory sausage, and bold pizza flavors without the crust. It’s keto-friendly, kid-approved, and perfect for weeknight meals or make-ahead lunches.
Ingredients
1 pound ground Italian sausage
2 eggs
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 cup sugar-free marinara sauce
1 ½ cups shredded mozzarella cheese
¼ cup sliced pepperoni
¼ cup chopped green bell pepper (optional)
¼ cup sliced mushrooms (optional)
1 tablespoon olive oil
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. Brown sausage in a skillet over medium heat. Drain excess grease.
3. Mix sausage with eggs, garlic powder, and Italian seasoning. Spread in the bottom of the dish.
4. Layer marinara sauce over the sausage mixture.
5. Top with mozzarella, pepperoni, and any optional veggies.
6. Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
7. Let rest for 5 minutes before slicing and serving.
Notes
Feel free to swap in ground turkey or beef if preferred.
You can assemble this a day ahead and bake when ready.
